Choc-choc-chocolatey Chocolate Cookies with Coconut Oil

Very chocolatey crunchy chocolate cookies with all kinds of chocolate and coconut oil

Since I started baking, I find that I can't eat many store-bought cookies, cakes, brownies or cupcakes anymore. There are only few I can tolerate... the rest just tastes so artificial and full of preservatives. So when a box of uniform-looking chocolate cookies appeared at work, I was suspicious. But - whoa. They tasted SO GOOD. So unlike other store-bought cookies... crunchy, chocolatey (but not too much), not too sweet and a hint of coconut. Delish. In fact, they were so delicious that I only remembered to take a picture when I had already eaten approximately 65% of the cookie. So, apologies for that. Ok, so this one isn't about baking and doesn't invole an oven in any kind. But, meh, who cares.
I was invited for dinner to a friend's place and usually I don't like turning up to stuff like that empty-handed, especially if I suspect the person may have put some effort in having me over (she did, it was delicious and a lovely evening - so I was very glad I had prepared something for her).
So this time I turned to Martha for inspiration. I like looking at Martha Stewart's website, I like the style and sometimes they have nice ideas. Yes, sometimes I like to browse the crafts pages, the wedding etiquette pages, the hostess gifts section... Does that make me older than I am? Well, I always suspected that I am a little bit 1950s housewife on the inside.

Zebra cupcakes with vanilla and chocolate buttercream



A few weeks ago I came across a recipe for zebra cupcakes. I had made a lovely zebra cake once before (of which no record exists... so I have no choice but to rebake it one day. It is a tough life.) and it had been quite a hit (mostly with myself. I loved it.) so of course I had to try a cupcake version. As a bonus, I topped it of with vanilla and chocolate cream cheese frosting - to keep in line with the zebra theme.

The beginning

So… another baking blog, huh? Does the Internet really need that? Maybe, maybe not. I don’t even think anyone will read this. The thing is just – I have been baking so much and for a while I had some real hits… but for the life of me, I cannot remember the recipes. So I figured, better start writing it down. For my own reference. And some friends have been asking me for recipes – especially for my macaron secret (it’s no secret. It’s no magic. It really just is pure… luck? Persistance? But we’ll come to that) (and I don't even get them right half the time!).
